Gulf brown shrimp are a staple, but Royal Red shrimp — deep-water, intensely flavored, naturally sweet — are the local secret. Often only available at Gulf Coast restaurants. Order them sautéed or lightly fried.
Grouper — the Gulf's signature fish
Fresh Gulf grouper is the defining fish of this coast. Meaty, mild, and versatile — grilled, blackened, or Parmesan-crusted. If it says "fresh local grouper" and the chalkboard is dated, it's worth ordering.
Apalachicola oysters
Florida's Apalachicola Bay produces some of the finest oysters in the country — briny, plump, and distinct from Atlantic or Pacific oysters. Order them raw, chargrilled, or Rockefeller-style.
The Bushwacker — invented here
Pensacola Beach's signature cocktail: a frozen blend of rum, coffee liqueur, chocolate, and coconut cream. Invented at the Sandshaker on Pensacola Beach in the 1970s. Every coastal bar has a version. Order one.
Amberjack & red snapper
Two Gulf fish you're unlikely to find this fresh anywhere inland. Amberjack is firm and meaty — great blackened or as a sandwich. Red snapper is lighter and more delicate. Both are frequently on the daily fresh board.
Gulf blue crab & soft-shell crab
Gulf blue crabs are sweeter and more delicate than their Chesapeake cousins. Soft-shell crab season (spring through summer) is a Gulf Coast treat — the whole crab, lightly fried, served on a sandwich or as an entrée.
